I can't take credit for this recipe, but I found it on allrecipes.com when I wanted to make pumpkin bread for staff. I also mix some powdered sugar, milk, vanilla and butter to make a glaze to drizzle over the top of it.
These are my absolute favorite muffins! I make these so often I don't need to look at the recipe anymore.
